Stuffed potatoes with Santo Amaro Sardines in Olive Oil

Cooking time: 25 minutes

For 4 servings:

  • 2 cans of Santo Amaro Sardines in Olive Oil
  • 2 big potatoes
  • 1 cup frozen peas
  • 1 diced small onion
  • 1/4 cup of mayonnaise
  • 1/4 cup of sour cream
  • 1/4 cup of parmesan cheese
  • Salt and pepper



Cut the potatoes in halves and boil them for 10 minutes in salty water.

Add the frozen peas the last 3 minutes . Drain and reserve.


Carefully remove the inside of the potatoes and mix it with the peas.


Finally add the mayonnaise, sour cream and salt and pepper.


Fill the potatoes with 1 teaspoon of diced onion, 2 tablespoons of potato mixture and parmesan cheese on top.


Bake for 8 minutes at 360 degrees F and serve.


Put the Santo Amaro Sardines on top of potatoes or next to them.
