Sardine Tacos Artisanal and Sustainable

For 2 servings:
- 1 can of Santo Amaro sardines in olive oil.
- 6 corn tortillas.
- 1 small diced onion.
- 1 diced bell pepper.
- 1 crushed clove of garlic.
- 1/2 teaspoon of smoked paprika.
- 1/2 teaspoon dried oregano.
- Salt and pepper
For the guacamole:
- 1 mashed avocado.
- 1 small diced onion.
- 1 tablespoon of coriander.
- 1 squeezed lemon.
- Salt and Pepper.
For the pico de gallo:
- 1/4 diced (skinless) green mango.
- 1/2 diced onion.
- 1 ripe diced tomato.
- 1 tablespoon of vinegar.
- 1 tablespoon of coriander.
- Salt and Pepper.

This is a recipe that you can enjoy while you prepare it. Sardine Tacos. Get the party started! The first thing we do is sauté the vegetables. Heat a little bit of oil in a frying pan, add the onion, bell pepper, garlic, paprika, oregano, salt and pepper. Keep it on high heat for 3 minutes and then turn it off.

To prepare the guacamole, mix the avocado, onion, coriander, lemon juice, salt and pepper in a bowl. Do you like it spicy?

The pico de gallo is the easiest part. Mix the mango, tomato, onion, coriander, lemon juice, a little salt and pepper and it is done!

How to prepare the tacos? Heat the tortillas in a pan with a little water, on very low heat. Once they are hot, put a little guacamole, vegetables, pico de gallo at the base and finish it off with Santo Amaro sardines.
