Tuna Fillets & Roasted Mediterranean-style Vegetables

Ingredients:

  • Santo Amaro Tuna Fillets with Olive Oil and Piri Piri Pepper

  • 120g Feta Cheese

  • 2 Eggplants

  • 10 small Cherry Tomatoes

  • 1 Zucchini

  • 1 large White Onion.

  • 1 large Carrot

  • 1 Red Bell Pepper

  • 2 Garlic Cloves

  • Parsley

  • Cilantro

  • 2 Bay Leaves

  • A dash of Thyme

  • 1 teaspoon of Oregano

  • Olive Oil

  • Salt and Pepper

Steps

Prep the veggies: wash, cut and place in an oven dish.

Drizzle with oil; add garlic, herbs, salt, and pepper.

Cover with foil. Bake at 180°C for 45 mins.

Uncover, sprinkle feta, and bake for 10 more minutes.

Add tuna fillets and Enjoy!
