Tuna Fillets & Roasted Mediterranean-style Vegetables

Santo Amaro Tuna Fillets with Olive Oil and Piri Piri Pepper

120g Feta Cheese

2 Eggplants

10 small Cherry Tomatoes

1 Zucchini

1 large White Onion.

1 large Carrot

1 Red Bell Pepper

2 Garlic Cloves

Parsley
-
Cilantro
-
2 Bay Leaves

A dash of Thyme

1 teaspoon of Oregano

Olive Oil

Salt and Pepper
Steps

Prep the veggies: wash, cut and place in an oven dish.

Drizzle with oil; add garlic, herbs, salt, and pepper.

Cover with foil. Bake at 180°C for 45 mins.

Uncover, sprinkle feta, and bake for 10 more minutes.

Add tuna fillets and Enjoy!
