Eggs and Santo Amaro Tuna

A recipe for breakfast or the complement for a perfect brunch. These eggs are delicious, colorful and full of flavor!
For 2 servings:
- 1 Santo Amaro Tuna in Olive Oil and Turmeric Curry.
- 2 Eggs -1/2 sliced red onion.
- 1⁄2 sliced red bell pepper.
- 1⁄2 cup canned tomatoes.
- 1 minced clove of garlic.
- A handful of olives.
- A sprig of basil.
- Salt and pepper.

In a frying pan add a splash of olive oil, brown the garlic, onion and bell pepper, add the tomato and cook for 10 minutes over a very low heat. Add the eggs, a little salt and pepper and cover for 3 minutes.
