Pasta with Cherry Tomatoes

 Autumn Salad with Santo Amaro Tuna in Olive Oil & Oregano

Ingredients:

  • 1 can of Santo Amaro Piri Piri Tuna Fillets
  • 200 g (7 oz) of pasta (spaghetti)
  • 300 g (10 oz) of cherry tomatoes (halved)
  • 2 tablespoons of extra virgin olive oil
  • 2 garlic cloves (finely chopped)
  • ½ teaspoon red chili flakes (optional, for a spicy kick)
  • Salt and pepper to taste
  • 10 fresh basil leaves
  • 1 teaspoon lemon zest (optional, for a citrusy touch)
  • Burrata cheese

Steps

1️⃣ Cook the pasta in salted water according to the package instructions. Reserve a bit of the pasta water before draining.

2️⃣ Meanwhile, in a large skillet, heat the olive oil over medium heat and sauté the garlic until fragrant.

3️⃣ Add the cherry tomatoes, season with salt and pepper, and cook over medium-high heat for 5–7 minutes until they soften and release their juices.

4️⃣ Add the cooked pasta directly into the skillet with the tomatoes, pour in a bit of the reserved pasta water, and toss well to combine the flavors.

5️⃣ Stir in the fresh basil leaves and, if desired, the lemon zest for a fresh finish.

6️⃣ Serve hot with creamy Burrata and tender Santo Amaro Piri Piri Tuna Fillets on top.
