Stuffed peppers with Santo Amaro Tuna and vegetables

Cooking time: 30 minutes

For 4 servings:

  • 2 cans of Santo Amaro Tuna in Olive Oil
  • 4 bell peppers without the top and seeds
  • 2 cups of frozen vegetables
  • 1 diced onion
  • 1 diced red bell pepper
  • 1 tablespoon chives
  • Salt and pepper

Boil water, add frozen vegetables and boil for 5 minutes, drain and reserve.

Saute onions and red peppers in a teaspoon of oil, add salt and pepper.

Mix the vegetables with the cooked red bell pepper and onion.

Fill the peppers with this mixture.

Bake the bell peppers for 10 minutes at 390 degrees F or until the skin is golden brown.

And put the Santo Amaro Tuna and chives on top of the peppers.
